My Apple Butter Boiled Peanuts recipe is very simple to prepared for a quick snack or appetizer. I enjoyed boiled peanuts whenever I can allow myself too, and this time I decided to add a bit of flavor with some apple butter dip. Omgg…. The blending taste of the apple and peanuts is very flavoring. Peanuts originated in South America and spread throughout the world by Spanish explorers who eventually took peanuts to Africa. In Africa, the plant became common in West Africa. Peanuts grow well across all regions of Africa and are a staple food as well as revenue source for farmers. In many parts of Africa, peanuts are usually known as “groundnuts,” because the nut pods grow underground. However, peanuts are eaten everyday raw, boiled, roasted or grounded paste. If you eat peanuts every day you get protein, vitamins, minerals and more that are a good source of fiber and good fats. Boiled Peanuts has higher levels of antioxidants than raw and roasted peanuts, which is great for your skin and heart. It helps you cut cholesterol in the body, fight free radicals and inflammation.

Also, Apple butter is a highly concentrated form of apple sauce produced by long, slow cooking of apples with cider or water to a point where the sugar in the apples caramelizes, turning the apple butter a deep brown. The concentration of sugar gives apple butter a much longer shelf life as a preserve than apple sauce. Apple Butter can be used for peanuts dip, spread on toast, stir it into oatmeal, top your pancakes and waffles with it, swirl it into cakes or cupcakes and brush it on chicken or pork during the last few cooking minutes.

Hot, homemade Apple Butter Boiled Peanuts are simply delicious. So, for this recipe, I have a bag of Hines Raw Jumbo Virginia Peanuts, Sea Salt and a jar of Apple Butter. If you cannot purchase the package peanuts, they are sold in the marketplaces by cup across West Africa, especially in Liberia. Finally added some water to a medium – large cooking pot, pour the peanuts into the pot and boiled on high heat for one hour. After one hour of boiling, take one of the shelled peanuts out of the pot, open and test the softness of the peanuts which will determine if the peanuts are fully cooked or need more water and few extra minutes of boiling. Finally, when the peanuts are fully cooked and cool off from the hot water, unshelled the peanuts and marinade with apple butter for a yummy flavor of Apple Butter Boiled Peanuts and enjoy my friend!

In West Africa, peanuts are used in authentic soups, stews or marinades where as peanut butter is used as thickener in many dishes. West Africans love hot spices and peanuts in their food. I am the number one hot spices lady (laughing)!  Boiled peanuts can be eaten warm or cold. I like them both ways, but if I had to choose, I prefer them warm…yes please! Fresh boiled peanuts should be kept refrigerated and will keep for about 10 days, possibly longer, in the fridge. For longer storage, boiled peanuts should be frozen. There are two easy ways to reheat your boiled peanuts: Microwave and Stovetop, place in the microwave for approximately 1 minute until they are hot. On the stovetop, bring a saucepan of water to a boil and reheat peanuts.

Ingredients
  

  • 1 lbs raw shelled peanuts
  • pin of salt for taste
  • 2 tbsp apple butter
  • 1 gallon water (add more later as needed)

Instructions
 

  • Washed 1lb raw peanuts
  • On high heat, combine ingredients in a pot and cover – water, salt and peanuts
  • Bring to Boil for 1hr and 30 mins
  • Remaining 30 mins of boiling, taste peanuts, and add salt as needed
  • Boil and cook to desired consistency. Remove from heat and cool 15 mins
  • Drain the water, un-shell the peanuts
  • Dip boiled peanuts with apple butter and served.

Notes

  • Soak peanuts in water overnight for a quicker cooking time.
