African Banana Fritter traditions goes back to mainly West Africa, where frying in deep oil is one of the major cooking techniques. In other parts of Africa, this dish is known as “kakro“, but the ingredients may differs. This African treat has gradually spread around the world and there are several names for Banana Fritters like gulgula, an Indian version made with bananas, raisins and cherries.  Another name is beignets de figues, the Haitians name for Banana Fritters. It is also cekodok pisang in Indonesia and Malaysia.

Banana fritters can be reheated either in a dry non-stick frying pan over a low heat, or you can place them on a baking tray in a hot oven for 5 minutes. You can also reheat banana fritters in the microwave, but it may cause the fritters to become soggy, so use less time.

Ingredients

  • 5 Bananas, cut into small chunks
  • 2 tbsp Powdered sugar, for topping
  • 1 cup Plain flour
  • 1 Egg
  • Pinch of salt
  • Oil to deep fry
  • Milk

Instructions

  • Make the batter by sifting the flour and salt in to a bowl with a tablespoon of cooking oil and small amount of milk. Mix well, add more milk and beat to a coating consistency.
  • Add egg, whisk and mix into the batter.
  • Dip each chunk of banana into the batter using a long pointed stick or fork, hold over the bowl for a few seconds to allow excess batter to drain off.
  • On medium heat, deep fry the bananas for 2 to 3 minutes, until crisp and golden, turning them once. Drain them on paper towels and transfer them to a serving platter. Repeat the process until all of the bananas have been fried.
  • Serve hot, sprinkled with powdered sugar.

  • While Banana Fritters are traditionally fried, they can be baked.
  • Fried banana is different from Banana Fritters because they are fried whole after being coated in batter.
