After planning my trip to Liberia after seventeen years away, I was only daydreaming about all the organic and delicious Liberian food that I enjoyed from my Mothers’ cooking. Liberian cuisine is special in its own sweet, spicy ways and are internationally popular. Have you tasted Liberian Jollof Rice yet? Hmmm… you are missing something unique, my friends! Liberians daily meals are centered on the consumption of rice, cassava, plantain, yam, tropical fruits and vegetables (potatoes, greens, cassava leaf, okra, cabbage), as well as fish, meat, and more. Liberia also has a tradition of baking, including cornbread, sour bread, rice bread, banana bread, and cakes.
So upon my arrival in Liberia, I had my list of Liberian dishes, snacks and sweets I wanted to eat after missing them for all these years. But, my busy agenda had me on the go, but I had the privilege for a quick ride to the local market and few Liberian-owned restaurants for some mouth-watering good Liberian food. I started my 1st night in Liberia with a well-seasoned Dry Rice and Fry Fish Gravy, oh how I needed that meal to revive my body after travelling for twenty plus hours and surviving on package plane food lol!
The rest of my stay in Liberia, I munched on spicy fufu and dumboy with goat pepper soup, red palm oil/fried potatoes greens, bitterball torborgee, red palm oil cassava leaves, fried beans, water greens torborgee, seasoned snails, roasted fish, roasted cassava, fresh coconut, fried rice, fried ripe plantains, potatoes salad, boiled corn, butter pear (avocado) and more…
