Eddoes Soup

Eddoes Soup…Oh how I enjoyed thee lol! This dish can be considered a one-pot meal because it is very filling and nutritional. After eating a bowl of eddoes soup, I am not hungry for few hours or more in a day. Back home in Liberia, cooking eddoes soup to get a person out of their sick bed, is similar to the magic of chicken noodle soup here in America.

The eddoe is sometimes called the “potato of the tropics”. The eddoe is also known as taro (root), dasheen, eddo or kale. Its barrel-shaped outside has inedible “hairy” skin. Eddoes have a light crumbly texture with a slightly sweet flavor, somewhat like a potato. Like a potato, eddoes can be roasted, fried or boiled. After cooking they can be sliced, grated or mashed. Most times, these vegetables are used as an alternative to yams and sweet potatoes. Their flesh is white, orange, yellow or pink.

Eddoes Soup is an excellent source of fiber and carbs. This makes it perfect for children, athletes and active individuals. Plus, it contains potassium, magnesium, iron, zinc and other minerals that support overall health. Since its rich in fiber, it keeps your blood sugar levels stable and prevents insulin spikes. Dietary fiber also aids in digestion and may lower the risk of colon cancer. Additionally, it keeps you full longer and suppresses hunger.

This vegetable boasts large doses of potassium, a mineral that helps prevent electrolyte imbalances and keeps your blood pressure in check. Potassium supports cardiovascular health and may lower the risk of heart disease. Copper, another key nutrient in eddoes, improves circulation and helps prevent anemia. If you’re trying to get leaner, enjoy this veggie in moderation. Since it’s quite high in carbohydrates, it may lead to weight gain. However, it contains good carbs, so it’s much healthier than fries, potato chips or candy. All ingredients for this meal can be purchased at your local community and ethic stores.

Ingredients

  • 1 bundle of eddoes
  • dry fish (optional)
  • shrimps (optional)
  • 1 sliced medium onions
  • 1 tbsp chicken flavor bouillon
  • 1 tsp cayenne pepper (optional)
  • 2 tbsp olive oil
  • 4 cups water (add more as needed)
  • 1 tbsp red palm oil (optional)

Instructions

  • Peel eddoes for cleansing, chop and add to pot
  • Add onions, peppers, seasoning and oilive oil
  • Prepare dry fish and shrimps, add to the pot of eddoes
  • on high heat, add water and cover soup to boil for 35 mins or more if needed
  • As broth is simmering down, mash few of the eddoes to create soup mix
  • Turn off heat, cool for 5 mins then eddoes soup is ready for serving
  • Add few drops of red palm oil for a delicious flavor and enjoy!
