Banana Pudding

Banana Pudding is a dessert consisting of layers of sweet vanilla flavored custard, cookies and sliced fresh bananas.

- 1 can sweetened condensed milk
- 3-4 ripe bananas, sliced
- 1 package of vanilla wafer cookies
- 1 can evaporated milk or 2 cups chilled milk
- 1 box instant French vanilla pudding
- 3 egg yolks
- 1 tsp vanilla extract
- 8 tbsps. flour
- dash of salt
- 12-ounce cream cheese whipped topping, thawed (optional)
In a saucepan, mix flour, condensed milk, salt, evaporated milk, eggs, vanilla extract and vanilla pudding.
On medium heat, cook until thick and continuing to stir for the next 15-20 mins.
Using a large aluminum dish, layer the cookies and banana slices in the bottom of the dish.
Pour ½ of the pudding mixture over the top.
Repeat with the second layering of cookies, bananas and the second ½ of the pudding.
The last step is to crunch up a few additional vanilla wafers and sprinkle on the top.
For additional topping, whipped or meringue toppings would be delicious!
Refrigerate for two or more hours until ready to serve or can be serve right away if you like it warm.
