Liberian Ginger Beer is a non-alcoholic beverage made with ginger, pineapple and lemon for a healthy, zesty and tasteful drink. This recipe is ginger beer Liberian style, which is one of my favorite drinks among many Liberian and West African beverages. Liberians make the ginger beer with the peelings or flesh of the pineapple only.
Ginger has great health benefits and is high in vitamins K, B6 and Magnesium. Ginger root is believed to relief symptoms of arthritis, motion sickness, nausea, gastrointestinal distress, cold symptoms, cancer-causing molecules and inflammation. So, drinking ginger everyday can support your overall health and it can be enjoyed by all ages.
Growing up in Liberia, Liberian Ginger Beer was always the major festival drink prepared for holidays and special family occasions. It is light and refreshing perfect to be enjoyed either hot or cold. This drink has the right amount of ginger spiciness for your tastebuds and body. The flavors can be jazzed up by using either of the following spices separately or together: cloves, cinnamon, nutmeg, and all spice.
Liberian Ginger Beer can be served alone to quench your thirst or along with side dishes such as rice, salad, fried plantain, sweet potatoes, grilled vegetables and seafood. For storage, it is generally a good idea to refrigerate your ginger beer, especially for those who want a cold glass of ginger beer that they can enjoy at their convenience.

Liberian Ginger Beer
Ingredients
- 8 cups water
- 3 lbs ginger roots
- 1 fresh pineapple (ripe)
- ⅓ cup lemon juice
- 1 cup sugar
- 2 tbsps all spice
Instructions
- Wash and peel the ginger root. Cut it into 1/2 " pieces and set aside.
- Wash the pineapple. Use a sharp knife to remove the peeling. Cut it into chunk pieces and set aside.
- Move cut ginger into the blender. Add ⅓ cup of water. Cover and set blender to high. Blend until ginger coarsely chopped and mixed well into the water. Repeat with the rest of the ginger. Transfer this mixture to a large pot.
- Repeat step 3 for the pineapple chunks and move to the pot of ginger.
- Add lemon juice and all spice to the ginger/pineapple mixture in the large pot.
- Add water and mix well. Pour the mixture through a metal strainer to remove the larger pieces of ginger and pineapple peel. Use a wooden spoon to press the juice through the strainer. Repeat this process three or more times to strain out the finer particles (use a clean cotton kitchen cloth).
- Add sugar to juice and stir. Add more sugar to desired taste.
- Store in the refrigerator for 2-3 hrs.
- Serve cold and enjoy!
